Cherry Rubarb Mousse
for 6 people

3 eggs, white and yolk separated
120 gr Freya Gurme Sour Cherry Işkın Sauce
125 ml cream
180 g dark chocolate
60 g butter
50g sugar
2g salt
5 ml vanilla extract
10 g granulated coffee
10ml hot water
Set the oven to 190c
Put oil and chocolate into the sauce pot.
Add coffee to hot water, stir and place in a sauce pan.
Add the cream and continue mixing.
Add your cherry sauce and stir for another 2-3 minutes.
Remove from the stove and let it cool.
Beat the egg yolks with 25 g sugar in a hand mixer and place in a small baking dish.
Place the bowl in a bowl filled with water and bake in the preheated oven for 2-3 minutes.
Remove from the oven and let it cool.
Beat the egg white with salt in a hand mixer, add the remaining sugar and beat for another 2-3 minutes.
Add the egg yolk mixture to the cherry chocolate sauce and mix.
Add egg whites slowly and mix.
Pour equal amounts into the container of your choice and chill in the refrigerator for about 2 hours.
